Great wine is no longer the province of just a few countries such as France or Italy. Chile is increasingly coming to be known for its outstanding grapes and wine. The Chilean Merlot that is part of the Selection International series from Winexpert wine kits is a top-quality Merlot. I have had a number of commercially-produced Merlots over the years and I would rate the Merlot that I made from the Winexpert wine kit one of the best I have had. Full-bodied and complex, it's a perfect wine to accompany beef and is also suitable for sipping in the evening.As with all Winexpert wine kits, the Chilean Merlot comes with easy-to-understand instructions. The wine is simple to make. It's a five-step process from mixing to bottling. Each step takes not more than about 30 minutes (although the bottling may take closer to 45 minutes because of the time it takes to sanitize the bottles). So, with three hours or so of effort you'll produce a high-quality wine. The entire process takes 6-8 weeks from mixing to bottling. In the case of the Merlot I would wait six months after bottling before drinking, since this wine takes time to mature. The kit makes approximately 30 750ML bottles.
I'd also suggest using a plastic rather than a glass carboy. I recently switched. The plastic carboy is extremely light and is far easier to lift when full than is a glass carboy.
